Harvesting, levinification and refinement :
The harvest is carried out manually after the first ten days of October with

Sort by the bunches.It is placed in steel tanks with control of the
Fermentation temperature (25/30°C). It is found after 7/8 days and the malolactic is
induced and completed with the maintenance of the temperature before
of the winter. It is bottled toward the end of August, to be put on sale 50, 60 days later.
Characteristics of the wine :
Of color
ruby red more or less clear, tending to orange with
the ageing.
Gentle scent, elegant, with a hint of purple becomes finer with
aging, dry of good body, velvety, harmonious.

It is useful
a 16th-18oC. . Nebbiolo finds good combinations with dishes
tasty as the polenta (ideal with gorgonzola) and with
seconds a
base of tasty meats ( veal foot, guinea fowl) and cheeses
seasoned.
