Vine, nature of the soil :
100% Barbera. Soil
composed of 16% sand, 59% silt and 25% clay. The Barbera mainly extends
over a vineyard planted in 2020, while a small part comes from a 2015
vineyard. Both plots are exposed to the south-south-east, at an
altitude ranging from 450 to 500 m. s. the. m.
Harvesting, levinification and refinement :
The harvest is carried out manually after the last ten days of
September with a careful selection of the bunches. It is placed in
steel tanks with controlled fermentation temperature (25/30°C). It is
drawn off after 10/12 days and the malolactic fermentation is induced
and completed by maintaining the temperature before winter. Stored in
barrique barrels for 12 months.
Characteristics of the wine :
Of a more or less light ruby red colour, tending towards orange
with ageing. Delicate, elegant aroma, accompanied by a "backbone" of
freshness, which guarantees a very pleasant drink. The passage in oak
barrels rounds the palate and gives a pleasant tannic balance.
Harmonica from a young age, it can mature for several years in the
bottle. Serve at a temperature between 15-17° C.
Abbinamenti
:
Barbera
goes well with roasts and red meats, side dishes such as typical
Piedmontese cheeses such as gorgonzola, toma and raschera.
